Guest Chef David O’Kelley is returning for the January Lunch Bunch on Thursday, January 16th, 1200N at the Yachats Lions Hall, with a Mexican themed lunch. The core of the meal will be using heritage Posole and Beans from Rancho Gordo as well as their Red Chicken Posole, Green Pork Posole and Refried Bean recipes. The Posole will also be complemented with classic Bean Tostadas. Deserts will consist of Three Kings Cake (Rosca de Reyes) and Carmel Flan.
This meal is inspired from David’s time traveling to Queretaro Mexico while working with a team of software developers. For lunch there was a favorite Posole place that we would go to and during January the office had a Three Kings Cake – my first experience.
